Banana Bread
Ingredients
Wet
- 4 ripe bananas
- 2 eggs
- 1/3 cup real maple syrup
- 1/2 cup sourdough discard
- 1 tsp vanilla
- 1/4 cup room temperature butter
- 1/4 cup (or less) brown sugar
Dry
- 1 3/4 cup flour (whole wheat or all purpose)
- 1 tsp baking soda
- 1/2 tsp salt
Variations
- Remove two bananas and add:
- half a can of pumpkin puree
- 2 tsp pumpkin pie spice
Directions

Preheat oven to 350 degrees. Grease a pan for baking.

Combine the dry ingredients and mix well

Cream the brown sugar, vanilla, and butter together

Add in eggs, maple syrup, and sourdough starter. Mix until well combined, but be careful not to overmix.

Mash the bananas. Add them in, and the pumpkin if making the variation. Mix well.

Gently fold in the dry ingredients and any additional mixins until well combined.

Pour into the greased pan.

Bake for 50-60 minutes, until a toothpick or cake tester inserted into the bread comes out clean.

Let sit at room temperature for at least 10 minutes before serving.
